VICTORIA SANDWICH (serves 8) 

Ingredients 

  • 100g (4oz) margarine
  • 100g (4oz) caster sugar
  • 2 eggs, size 3
  • 100g (4oz) Be-Ro self raising flour 

Method 

  • Heat oven to 180˚C, 350˚F, Gas Mark 4.
  • Grease an 18cm (7 inch) cake tin or 2 x 18cm (7 inch) sandwich tins 
  • Cream margarine and sugar until light and fluffy.
  • Beat in eggs, one at a time, adding a little flour with each 
  • Gently fold in remaining flour 
  • Place in prepared tins and bake for 20-25 minutes in 2 tins or 40-45 minutes in one tin 
  • When cool, fill with jam or cream
