VICTORIA SANDWICH (serves 8)
Ingredients
- 100g (4oz) margarine
- 100g (4oz) caster sugar
- 2 eggs, size 3
- 100g (4oz) Be-Ro self raising flour
Method
- Heat oven to 180˚C, 350˚F, Gas Mark 4.
- Grease an 18cm (7 inch) cake tin or 2 x 18cm (7 inch) sandwich tins
- Cream margarine and sugar until light and fluffy.
- Beat in eggs, one at a time, adding a little flour with each
- Gently fold in remaining flour
- Place in prepared tins and bake for 20-25 minutes in 2 tins or 40-45 minutes in one tin
- When cool, fill with jam or cream
