A good way to showcase your ideas - and your restaurant - is to
contribute recipes to foodie books. That's just what 18 local chefs
have done, and the result is A Taste of Cumbria, a
sumptuous collection of photographs and recipes that celebrate
everything that's good about the food we have here.
‘Hairy Biker' Dave Myers, a native Cumbrian, says in the foreword: ‘Quite simply, no region does this better.' The book covers a wide range of establishments from cafés and gastropubs to fine-dining restaurants and country house hotels. It is not just glossy pictures of plates of food but tells the story of the people and the places. People like Chris Blaydes at Jerichos who, with his wife Jo, realised a dream last year when they moved into the old Waverley Hotel at Windermere, to create a 'restaurant with rooms' . Each places gets to show off three courses - Chris kicks off with an asparagus and langoustine risotto with deep fried leek. The Punch Bowl Inn at Crosthwaite makes the most of its Lyth Valley position ‘nestling snugly amongst the damsons' with damson ice cream to accompany an apple tarte tatin.And we read how Lucy and Mark Fuller came to Kirkby Lonsdale to order cheese for their wedding and fell in love with the run-down Sun Inn. Well - as the book shows clearly - it's not run down any more! Chef Sam Carter offers breast of duck with rhubarb crumble; and a take on strawberries and cream that is nothing like you'll get at Wimbledon. The dessert is a three-layer creation of champagne jelly, strawberry mousse and vanilla cream. The mouthwatering photos really do the food and the restaurants justice, and we hope they'll help to boost trade in all these places.
